The Sausage Sensei aka Texan barbecue legend, Bill Dumas is coming to Perth!
Pitmaster University are combining with Bill Dumas for our Bill Dumas X Pitmaster University Collab - USA Barbecue Guru Series Class and Degustation on Saturday the 22nd of March.
This is once in a lifetime chance to learn the art of Texan style Barbecue from an icon of Texas barbecue, living legend and pitmaster Bill Dumas!
Bill Dumas needs no introduction and has extensive experience as a pitmaster in high volume, award-winning, Texas Monthly rated BBQ restaurants over many years.
Bill now resides at Schulze's Pit Room in Seguin and has trained everyone from backyard BBQ warriors, to butchers, to BBQ restaurants and competition BBQers in the art of Texas style barbecue, so it's an honour to have him on our shores.
After many months of planning, Bill Dumas is going to be in Perth for one epic weekend of learning the art and science of Texan style barbecue.
When you go to a BBQ joint in Texas, brisket, pork ribs and sausage is known as the Holy Trinity of BBQ, so guess what we're going to do?
Ongie and Jason are taking the back seat with this one because Bill will be running the show with all his teachings and his recipes but with a familiar format of us putting food in your face from the very start and strategically throughout the day, so you will leave not full of knowledge but also the renowned Pitmaster University full belly.
You won’t recognise the class, aside from all the food getting stuffed in your face and the massive platter at the end, everything in between will be under Bill’s guidance and with all the regular banter that you’re used to.
Whilst you eat like kings and queens, Bill will show you how to hit BBQ home runs at home.

This class is designed to cater for the average Joe or Joanne, just starting out or still learning the art of low and slow BBQ and tailored to be easy to follow recipes, instructions and sure-fire techniques, for you to be able to hit the ground running but we'll also cater to those that are well on their way to becoming a pitmaster too.
Lots of people just come along for the incredible feed though and many bringing along their wives, husbands and partners for the big day!
This masterclass will cover how to cook a range of meats, with a kiss of smoke and fire, to give you moist, tender, succulent and flavourful results.
The course itself is held over a total of 6 or so hours, so we can focus on ensuring that everyone can see how simple it is for you to replicate and impress your family and friends at home.
On the menu is:
The Texas Trinity,
Wagyu brisket and cheap brisket, so you can compare,
Pork ribs,
Sausages,
Mexican inspired tacos,
Burnt ends,
Lamb ribs,
Steaks,
Smash burger sliders,
Cornbread.
We'll not only share the basics and fundamentals of how to extract the best out of your meat but also your smoker. Just ask us and we'll point you in the right direction.
During the class, you'll get to snack on what's been cooked along the way and at the end of the class, you will get to wrap your laughing gear around the stunning, epic meat fest platter but with Bill's Texas influence.
The course is only $350 plus booking fee to be affordable for everybody and hopefully affordable enough for your wife, husband, partner or best mate to grab a ticket and attend too!
The big day is Saturday the 22nd of March and tickets are on sale on Monday the 21st of October at 12 noon but numbers are strictly limited and payment will be required to secure your spot and avoid disappointment.
We will also do a limited number of special pre-release tickets for Guru 101, 102 and 202 attendees, prior to the sale.
