In this class, we will make 5-6 types of traditional Japanese fermented condiments, mainly using koji. These condiments are incredibly versatile and can elevate the flavour of everyday dishes. We will also make furikake using leftover vegetables from cooking, and transform kombu and shiitake mushrooms, used after making dashi, into a delicious tsukudani. This workshop is packed with the wisdom of Japanese home cooking, offering practical tips and techniques that you can easily incorporate into your daily meals.
